
I was craving more Pumpkin! Trying to keep up with the low calorie skinny versions of the pumpkin treats can be difficult! There are so many pumpkin products out there! I noticed that the stores have shelves of “Pumpkin Spiced” breads, cakes, cookies and on and on! Do we really know what they put into the products? Not to mention the high calorie count! Yikes!
Like their mother, my boys LOVE pumpkin! So I wanted to make sure that my boys are filled with the riches of pumpkin in fall! I also wanted healthier versions for them without giving up the taste!
SQUIRREL!
I decided to make an old recipe, but I wanted to change it up a bit. It is simple, just a few ingredients and fits the “Skinny Menu”!
The cookies are fluffy and soft! You can ice them frosting if you would like, but that depends on your sweet tooth. Both of my boys LOVED this version of the cookies and they didn’t last long in my home!
Ingredients:
- 1 box white cake mix (Dry)
- 1 can Pumpkin 15oz
- 3 T Pumpkin Spice
- Chocolate Chips (Optional)

Get started!
Step1: Preheat your oven to 350’. Get a large mixing bowl and add the pumpkin, dry cake mix and pumpkin spice into the bowl and mix it up well. (Adding the pumpkin first makes it easier to mix)
Step2: Add the skinny pumpkin batter to a large Ziploc, seal it well and snip an end off with scissors. This will make it easy to dispense cookies!
*** The Ziploc trick is awesome! I use it for so many things! Frosting, cookie batter etc!***
Step 3: Lightly spray your cookie baking sheets, and start to dispense the cookie batter onto them. They will not spread, so they can be close together. If you are adding chocolate chips, add about three to the top of each cookie.
Step 4: Bake for about 12 minutes and cool on a rack.
Enjoy without the guilt!

· 50 calories per cookie!
· 56 calories per cookie with chocolate chips!
Tips and Tricks:
- You can use Spiced Cake mix and omit the Pumpkin Spice. (I prefer to know what spices are really in my cookies)
- You can try adding reese’s pieces!
- You can use a tablespoon to dispense the cookies if you prefer.
