
I love Asian food! That goes without saying! However, trying to eat healthy, especially during these extended Covid days… it can be really difficult. Many of us are still working from home. That means we have a never ending supply of food from our kitchen… and it can take a lot of self-control to know when you are bored or honestly hungry!
I find myself looking for new creative ways to use healthy food… something that will be both nutritious and satisfying. Recently I purchased fresh head cauliflower and I wanted something new… I left it in the fridge for a few days until I could try to figure out what to do with it! After looking through a bunch of recipes, I came up with a game plan! SQUIRREL!
This dish was amazing and a hit! There were no leftovers, and the flavor was outstanding. Not only was this filling and satisfying.. it was pretty darn healthy!

- 3 T Avocado Oil
- 1 (12oz) Smoked Turkey Sausage
- 1 Streamed Fresh Bag of Broccoli
- 2 Large eggs
- 1 Head of Cauliflower
- ¼ C Reduced Sodium Soy Sauce
- 1 T Toasted Sesame Oil
- ½ t Granulated Sugar
- 2 T Chopped Cilantro
Step 1: Prepare your ingredients! Cut your sausage into coins. I cut mine into about ¼ inch. Lightly beat your eggs in a small bowl, chop up your cauliflower head into rice size pieces, steam your bag of broccoli and chop it into smaller pieces.
Step 2: Use a large nonstick skillet, and heat about 1 T Avocado Oil over medium to high heat. Next, you will add the Turkey Sausage and cook for about 2 minutes on each side, you want the coins to be browned, but not burned. Next, add the broccoli and cook for an additional 8 minutes, siring occasionally. Remove the mixture from the heat and set it aside.
Step 3: I recommend that you wipe the skillet clean, removing any pieces of food left without burning your hand. Add 1 T Avocado Oil over medium heat. Add the lightly beaten eggs. I used fresh eggs from our chicken coop! You can taste the difference! This will look similar to an omelet, cook on both sides, remove from the heat, and transfer to a cutting board. Using a knife, cut the egg into ¼ inch pieces (you can used bigger pieces if desired).
Step 4: Your skillet should now be turned up to medium to high heat and add 1 T Avocado oil. Add your fresh cauliflower and cook until lightly browned. This can take up to 15 minutes.

Step 5: Once the cauliflower is ready, add your Turkey Sausage/ Broccoli mixture, eggs and the remaining ingredients until evenly warmed. I recommend serving this meal in a bowl, topped with chopped cilantro.

Do you like it spicy? Add some sriracha or sriracha mayo!
