Skinny Sushi BLT Rolls

Let me start off my saying that I love Sushi! Whenever I crave it.. it makes me want to create a special occasion to just go grab a fun lunch or dinner with my partner or friends. It’s a great way to socialize and converse with people.. discussing the variety of fish, flavors, ingredients, texture and so on… not to mention, Wasabi wars!

Lately my partner and I have been focusing on low carb foods to help support our personal gym goals and overall physique.  I have been researching and trying new things… while tweaking them to fit our taste and what really works well for our cooking and preparing lifestyle. We like to be adventurous and try innovative recipes, but finding something that is sustainable and using ingredients we have readily available is equally important.

I came across and idea for different types of sushi and SQUIRREL! Low carb alternative- no sticky rice full of starch and carbs… a low carb alternative… and I might add… who doesn’t love the taste of a BLT?

We made this dish for a fun lunch, and it did not disappoint. It had all the great flavors of a classic BLT, just without the guilt of bread!

Ingredients:

  • 11 Slices of uncooked Bacon
  • Cherry tomatoes (Diced)
  • Romaine Lettuce (Chopped)
  • 3 T Mayonnaise
  • Salt and Pepper (To taste)

STEP 1:

Preheat your oven to 400’. Place a baking rack inside a cookie baking sheet, or you can you can use a broiler pan (see photos) and you will weave the bacon strips into rectangular bacon wrap. Trim the edges so they are even, this will make the rolling easier in the upcoming steps. This will be used as base to wrap up the BLT Sushi!

Cook the bacon for about 20 minutes. Remove it from the oven. Using two spatulas, flip over the bacon wrap place back in the oven for about 6 minutes. This will ensure that the bacon wrap is fully cooked, yet still allowing flexibility to roll up the ingredients.

Step 2:

Remove the bacon wrap from the oven and allow it to cool for a moment. I recommend that you use a paper towel to blot the bacon wrap removing any additional bacon grease as this will allow you to easily spread the mayonnaise.  This will also save you calories (Remember that bacon is carb free!).

Add the mayonnaise to the bacon wrap and ensure that you cover the entire area evenly.

Step 3:

Add the rest of the ingredients to the bacon wrap evenly, only covering along the edge. This will allow you roll the bacon wrap evenly and for the wrap to self-adhere to create the perfect BLT sushi roll.

Step 4:

Carefully roll up the Skinny BLT Sushi Roll and slice. This will make about 6- 7 pieces.

Serve with a side of guacamole as a dipping agent.

Tip and Tricks:

Try adding grated carb free cheese of your choice.

Try adding diced pieces of chicken, creating more of a Skinny “Club” Sushi Roll.
