Skinny Avocado Lime Chicken Salad

The warmer weather makes me think about staycations, day trips, camping and picnics! I am always up for a new adventure and experience! I love the excitement of packing up the vehicle  and taking my family out for the day. It could be as simple as planning a day trip to the mountains, a hike, fishing/ camping, or just going to explore a new spot and have a picnic. The most important thing about these trips is the quality time, so I do not want to spend a lot of time packing and prepping. I want things to be easy so I can just grab and go… so when that spontaneous moment arrives or if it’s time to ā€œGOā€, we can actually ā€œGOā€ and not discuss every detail before packing up the car… we can decide the rest on the road!

With that being said, one of the things that I have tried to incorporate into my adventurous lifestyle is healthy meals and snacking. I love trying new local spots and visiting with the locals… But when I am being more health conscious and aware, I prefer to think ahead and pre-plan when possible or have grab and go food available.

One of my favorite picnic meals is chicken salad sandwiches! There are so many options, so many varieties and it’s always fun to try a new version. Keeping that in mind, I am always trying to find a skinnier version, without losing flavor! I start thinking about all of the things I love to eat and how I can incorporate them into a new recipe!

SQUIRREL!

I decided to try an all time famous pairing: Avocado and lime! It always leaves me with a fresh, yummy summer flavor!

The next thing I knew, I was chopping, adding ingredients to a bowl and having a delicious, skinny version of chicken salad!

This recipe is not your typical chicken salad, but it offers so much flavor and with the avocado used as the blending agent… it really adds a kick!

Ingredients:

  • 2-3 C Chicken beast (Chopped)
  • 1/2 Avocado (Chopped)
  • Juice from half – whole lime (Depending on your liking)
  • 2 T Cilantro (Diced)
  • Salt
  • Pepper
  • 1/2 Red Onion (Chopped)

Directions:

Step 1: In a large bowl, add the chopped chicken breast, avocado, lime juice, red onion, cilantro and salt and pepper to taste. Mix well.

Step 2: Serve in a lettuce wrap or on toast of your choice.

Mangia!

This recipe is simple and delicious.

 Tips and Tricks:

  • Try adding tomatoes or cheese.
  • Try adding mayonnaise or another dressing of your choice. (This will add additional calories.)
  • Try using a whole Avocado.
