
It’s officially pumpkin season! Anyone that knows me on a personal level, knows that saying “I LOVE pumpkin” is an understatement! There are many reason for my love of pumpkin! First off, it’s a very healthy fruit! It is very low in calories and it is so versatile. I constantly research new creative ways to integrate pumpkin to my regular meal prep, especially this time of year!
My oldest son is very picky. He will refuse to try most new foods and he is very inquisitive when he sees new things, inspecting them thoroughly. I am excited to say that I must make an outstanding pumpkin pie, that is one of the only things he will eat that is not on his typical menu choice. With that being said, considering our love of pumpkin, it was time to be more creative and get this little guy to branch out of his comfort zone to try new things. So, how I could do that using pumpkin?!
Let it be known that I do not really have a sweet tooth, but I cannot deprive my kiddos! If I feed them sweets, I prefer for them to be on the healthier side and festive!
SQUIRREL! Skinny Pumpkin Donuts! They are fast and easy. The texture is great, and every bite gives you a taste of fall. Both of my boys LOVE the donuts and my neighbors are making special requests!
Ingredients:
- ½ C Apple Sauce (The type is your choice)
- 3 Large Eggs
- ½ C Sugar
- 1 ½ C Pumpkin Puree
- 2 t Pumpkin Pie Spice
- ½ t Salt
- 2 C Self-Rising Flour
- Cinnamon/Sugar mix for the coating**

Let’s get started!
Step 1: Preheat the over to 350’. You will want to lightly spray your donut pans with a cooking oil like Pam. Set them aside.
I purchased my donut pans from Amazon. They were only $13.50 and free shipping with Amazon Prime!

Step 2: In a large bowl, mix the apple sauce, eggs, sugar, pumpkin puree, spices and salt until smooth. Next, add the flour and mix until smooth.
Step 3: Fill the donut pans about ¾ the way full. I used a ¼ C measuring cup to ensure they were all the same size.
Step 4: Bake the Skinny Pumpkin Donuts for about 18 minutes. Let them sit for a few minutes before transferring them to a cooling rack. Sprinkle with the cinnamon/sugar mixture and enjoy!

Tips and Tricks:
- I try my best to cut out unnecessary calories. However, you can add more sugar if you have a larger sweet tooth.
- Don’t have a donut baking pan? No Problem! Just bake them in a muffin tin= Skinny Pumpkin Muffins! Fill each muffin mold ¾ full and bake for about 25 minutes.
- These are considered “Cake Donuts” therefore, they will get soggy in airtight containers. I stored mine in an open zip lock after completely cooled and placed in the the fridge for easy snacking!
- Enjoy this lovely donut with a cup of Pumpkin Spiced Coffee! Yum!
