As we approach the colder season, I begin to crave those comfort meals! Thick hearty stews, casseroles and food that makes me want to be wrapped up in a blanket reading a book by the fire. The meals that give you all the taste with the safety and comfort of home. AKA- Comfort food!
The only down side to all of those lovely, irresistible comfort meals are the calories! I like to indulge on occasion, but not on a regular basis.
That’s when I decided… SQUIRREL! Just like that, the skinny version of the chicken pot pie was born!
Ingredients:
- 1 C Fat-free half and half
- 1 C Organic chicken bone broth
- 3 TBS all-purpose flour
- 1 tsp Poultry seasoning
- 1 tsp Thyme
- I (12.5 oz) Can chunk chicken breast
- 1 (10 oz) Package frozen mixed veggies
- 1 tsp Salt
- ¼ tsp Black pepper
- 1 can refrigerated biscuits
- 8 x 4oz Ramekins

Let’s get to work!
The first step: Using a large pan on the stove; Add the fat free half and half, chicken bone broth, seasonings and flour. Stir occasionally until you bring it to a boil. Turn down the heat, and simmer for about three minutes while you continuously stir. Then turn the heat off, set aside and cover to keep warm.
Second Step: Drain the can of chicken and any liquid from mixed vegetables. Add both to the pan and mix in well. Cover.
Third step: Spray the ramekins with non-stick cooking spray and add the filling.
Fourth step: Using a lightly floured surface and a rolling pin, roll out a biscuit enough to cover the top of the ramekin. Continue to do this for all eight biscuits.

Fifth step: Cover each ramekin with a rolled-out biscuit, ensuring that you pinch down the sides of the biscuit around the top of the ramekins.
Bake the Skinny Chicken Pot Pies for about 12 minutes. This will keep the filling warm, as the biscuits brown.
Mangia! Enjoy the comfort food without the guilt!

Tips and Tricks:
- If you do not have ramekins- check out your local dollar store or discount stores ex. Ross. You can pick them and save some cash!
- If you are not interested in using the ramekins to create eight servings, use a casserole dish, add the filling and cover with biscuits, and bake! No need to adjust the baking time or temperature.
- You can use rotisserie chicken, or bake/ boil your own chicken for lower sodium.
